Valpolicella Ripasso Superiore
The secret of our Ripasso is the quality of the Valpolicella Superiore used to be ‘repassed’ with Amarone skins. The strengths of our Ripasso, distinctive enough to make it a unique product, are linked both to the quality of the grapes used (Valpolicella Superiore with considerable thickness and resistance), and to the fermentation process, which gives the unique and recognisable taste of the product.
Aging lasts 18 months in large French oak barrels (Allier area), ready to taste after a minimum of 30 months in the bottle.
Food pairing: Pasta dishes with meat sauces, meat ravioli with ragù, mixed boiled meat, delicate game, roasted red meats and grilled meats.
