The average age of our Valpolicella Superiore’s vines is of 30 years old. Quality and exclusivity are guaranteed by rigorously selecting the best grapes in 3 distinct moments: Initially when harvesting the grapes and then subsequently, on two occasions, during the withering process.
The withering process is not forced, lasting 30 days; pressing takes place on the day of San Martino (11th November). The wine making process takes place in a winemaker specifically designed to enhance its delicacy and make it unique.
Our Valpolicella Superiore ages for 18 months in large French oak barrels (Allier area), followed by a minimum of 30 months of aging in the bottle.
Food pairing: Cold cuts such as mortadella ham and lard, medium-aged cheeses, soups and grilled or roasted white meat, especially poultry and pork.
